Bromelain is a pure natural plant protease extracted from the stem, leaves, and skin of pineapple fruit. It is a thiol protease with a molecular weight of 33000, an isoelectric point of 9.55, and a light gray powder appearance. It is slightly soluble in water and insoluble in ethanol, acetone, chloroform, and ether.
